There was a nice summary of the clubs on a post here. Food wise, try go to out of the centre for that. City centre is expensive and bad. Signs saying tourist menu means they wouldn't feed it to the locals. So avoid them.

I am happy to advise on anything else since I work here and go exploring a lot.

As for clubs...

Indeed...sameplace or club paradise is the best option in Amsterdam...

for whomever wants to have a very good time..Fata Morgana...is the place to go
