Absolutely avoid Temple Bar-its rubbish and you'll likely get mugged!
Good pubs for decent Guinness and fairly authentic atmosphere:
All south of the river:
Mulligans Poolbeg St
McDades-Harry St-just off Grafton Street
The Long Haul Georges St
Stags Head-just off George's Street
Reasonable food: Gotham Cafe, South Annes st, just off Grafton Street. Keoghs pub is OK but has become a bit touristy.
Posh bar: Shelbourne hotel-you might score a couple there!

Kilmainham Goal-book in advance-learn why there is so much angst between the Irish and the British (well in 1916 anyway)
Guinness gravity bar-part of the brewery tour-book in advance.
Sat or Sunday, take the DART train from Tara Street or Pearse Street out to Dun Laoghaire and try Cavistoins Glastule for Fish!
Good food: Rolys Ballsbridge, Courtyard Donnybrook-you'll need to book!
