For a start you'd probably be best to specify whether you'd like to meet a person who has transitioned MTF or FTM 🤷
After that I guess it's like meeting any other person. Get to know the person, communicate with the person, discuss what you're all looking for and hope to gain from the experience.
And bear in mind that not many people are happy to be something that someone fancies "trying"
