I like potatoes - particularly roast and I am often told that I'm good at preparing them. The secret is to use an appropriate variety. If you can mash or roast a Jersey Royal satisfactorily you deserve more than a gold star!!! Not all potatoes are the same. Keep roasting !

Roasty ones, part boiled, drained fluffed in the pan with salt and put into a smoking pan with cooking oil or goose fat.

Roasted, aslong as they have been softened adequately enough and scored b4 baking, giving the rough crispy edges! very sturdy indeed
