Some other foods brought on digestive problems too...if I had to just avoid cauliflower I'd be OK with that

A good strong cheese sauce can make many things edible, it's not great if you need cheese sauce to eat it. You take the cheese sauce off a Philly cheese steak, what have you got left? A steak sandwich! Delicious.
