I am attemting to create the ultimate fab menu so seeking the help of you lovely people. (Good but not pretentious food)
First of all I am looking for another judge to join me (pls DM me if you want to be one with a short sentence why I should pick you for that role). I am not looking for chefs just someone who appreciates good food. When everyone has posted on this thread, then the two of us will deliberate and publish a menu of 15 starters, mains and desserts on another thread. In that thread, everyone will have the opportunity to vote for their favourite. The votes will be counted and I will publish the final fab menu of 5 starters, mains and desserts.
So all you need to do for now is to post here the name of a starter, a main and a dessert you would like to see on a fab menu. Thank you.  |

M: Iceland’s lasagne with Iceland’s chips made in the air fryer. Baked beans optional
D: Trifle made from a Bird’s Packet.

Starter, langoustines with lobster tail cocktail.
Main, pan fried duck breast, mushroom risotto, charred asparagus with a red wine jus
Desert, melt in the middle chocolate bomb with a raspberry coulis and French vanilla ice cream |

Lancashireredhead and Sinister Sinister will be the other two supporting me to choose 15 ebtries for each course on the menu from all those submitted. Then we will go to forum voting on the next thread where everyone cam vote so that we get our top 5 for each course

A final announcement re the judging of which courses progress to the second stage. I now have 3 wonderful assistants. lancashireredhead, Sinister Spinster and Allessandra_B. At the end of this thread when all entries are in, each will be given one of the courses to judge to decide which 15 entries go though to the next stage with myself looking at the overall picture, appropriate mix of dishes so that courses compliment etc. Please keep posting your suggestions. I know there are lots of foodies on here |

S: Sopa de Lima - a delicate, fragrant soup made from a special kind of lime only found in the Yucatán Peninsula
M: Tacos de cochinita pibil - these tacos are made with freshly ground corn tortillas. The pork is marinated in a blend of chillies, annato seeds and citrus, and baked in a ground oven wrapped in banana leaves until it falls off the bone. Served with picked red onions and like. Optional side of guacamole.
D: Marquesitas con Queso de bola- Yucatán has a number of ports that have received trade from Europe for centuries, and there is a large settlement of Dutch immigrants in the state. Gouda cheese is used in a number of different dishes. Marquesitas are a cross between a wafer and a brandy snap, filled with the savoury cheese and topped with cajeta (dulce de leche) or simply enjoyed as is.

Starters -something boring like fruit salad with different fancy exotic fruits
Main - roast rosemary and caramel beef with horseradish cream mash and roasted veg
Desserts - mini cocktail fruit pie with cream, my speciality is pina colada pie (pineapple and Malibu filling with coconut pastry) or raspberry mojito pie (raspberry and rum filling with minty pastry) |

I appreciate is not a length or girth thread or anything of that nature to excite everyone but you have been great sending these and you certainly excited me. The judges will now do there shortlisting and I will be posting their choices on a new thread when readt for everyone to vote for the final five for each course to go on the menu.
