I would make elderflower champagne but it's the exploding bottles that out me off "
Well once you've had one explode, it's a great reminder to periodically loosen the lid a little. I store mine in plastic bottles so you can see when you need to do it as the bottle starts looking a tad distressed! |

"Yeah I got quite into it a few years ago with mixed results... Banana and apple were the best whites, reds tend to be better but you need to leave them a long time "
Absolutely. I made one from tinned peaches a couple of years ago which is more like liqueur but it's very good. And very strong.
I make reds from kits and they are good |

Also keep refrigerated because the natural yeasts will start working …
