We had a freezer dinner which is rare in this house...and it was a bit of wing it job!
Tandoori chicken kebabs cooked and sliced..onions fried with a little chilli powder, a curry sauce made from a concentrate paste (first time using it..it was good!) and crispy French fries.
So we basically had curry and chips 🤣
Was banging to be fair. |

Being very healthy tonight 😇 and having a king prawn and squid stir fry. Veggies are all prepared and ready to go; just got to decided on what seasonings I fancy adding 😋 |

The seafood stir fry I cooked last night was delicious 😋
Tonight I made vegetarian fajitas using Quorn mince (I stopped eating meat a couple of months ago and feel so much better for doing so). And, I finally managed to make parmesan sweet potato fries, in the oven, that were actually crispy...not soggy! Hurrah! They were scrumptious😋 |

I can't believe I didn't do it a long time ago but I asked AI where I was going wrong 🤣 So, it told me:
1. Peel and cut the sweet potatoes, then soak them in cold water for 30 mins.
2. Drain and pat dry (I used a clean tea towel)
3. Toss them in 1tbsp olive oil; then toss them in 1tbsp cornflour mixed with 1tbsp finely grated parmesan.
4. Spread out on a baking sheet and cook at 200°C (fan oven) for 20mins; turn them over and cook for another 20mins.
5. Turn the oven off and leave them for 10mins ... I don't why this was important, but I did it, and it worked. And they were bloody lovely.

As it's a Bank Holiday, the usual takeaway was in order.
She had a large lamb Donner, and I had a large chicken Donner. Both had enough left over to stick in the freezer and put in a baguette for another time.
We're thrifty buggers, but with the prices of takeaways what they are now, it's only sensible to get a couple of meals out of it.  |
