Try this if you haven't already: if you're cooking with fresh chillis (as any right thinking person should be), rather than chopping them into tiny bits take a whole pepper and put a slit down its length with a sharp knife, leaving seeds in there but unable to escape. Let that drift around in the sauce while cooking and you should get the fresh chilli flavour without the little hotspots you get from chopped pieces (remove before serving obvs unless you want a nasty surprise!) |

yoghurt or coconut milk both work.
You could also add raw potato (soaks up capsaicin.
Adding lemon also works. Capsaicin (active ingredient in chillies) is an alkaline, so the acid will help neutralise it.
Alternatively I have some man-up pills on special offer

Ah that's a great idea, back from the shop now though with yoghurt. Gonna give that a go. Next time nacho chilli is the way to go though.

Rather then using fresh chilli's you could use a mixture of
Paprika/cumin/cracked black pepper
Always taste as you go,and try to build heat/taste rather then chucking things in |
