What about an experience day? There are so many to choose from. Could always combine it with an overnight stay somewhere nice.

Like an experience ? AirBnB has some good ideas under experiences. I did a weekend in Seville and booked all kinds of crazy stuff on there - rooftop paella class, pub crawl with locals , flamenco stuff. Some locations are insane for the experiences
