Amsterdam's red light area is bascially split into two parts. There's the "touristy" bit with the live sex shows and sex shops for the tourists to have a perv and giggle at. Then away from the brighter lights down the back streets there is the "real" stuff going one where, for the right price, you can do pretty much anything.
But these two worlds seldom clash as it were so you won't (most likely) find any shows where you can join in as such. In fact the opposite... I have seen d*unk/stoned people get ejected VERY quickly for getting too "hands on" shall we say!
But if you're wanting a live sex show just to watch there are countless ones to choose from. A few are...

- Moulin Rouge - book in advance as VERY popular
- Club LV - perhaps might be of interest as not only do they put on live sex shows it also doubles as a brothel - apologies if that last suggestion causes any offence. Not intended to of course!
