So I'll send a nicely worded message with pictures to a couple. They open it and then nothing.

Why don't they delete them if they are not interested??.

This isn't just a one off it's almost every time.

No criticism just curious as to what they are thinking

If your messaging a cpl , it's usually because one half has read it & left it for the other half to read.

Not always. But usually

I think it's best for peace of mind to assume that everything other than an enthusiastic reply is a polite 'no thank you'. It stops the wondering

Who cares if they delete it or not? They didn’t respond either way.

If I were you I’d avoid checking if people have read your messages or not. Once something is sent just clear your mind and move on from it.

I delete messages when I bulk delete I’ll save messages of interest and then just use my saved message list as primary

They are thinking nothing as it means nothing. It’s just random messages. Propose manage mail boxes differently.

Do yourself a favour and delete your sent messages after sending one. That way you won’t be tempted to read sent messages and get bent out of shape over if they get read / ignored etc

Fire and forget always the optimal approach

The question is either predicated on a misunderstanding or a sense of entitlement. Benefit of the doubt.... It's a misunderstanding. There is no benefit to my mind of deleting a received message, so I don't do it. You are attaching a meaning to this that is inappropriate.
