After Midnight killed my mood for lamb koftas and salad tonight (she knows I am joking ), I am currently making a nice smoked paprika orzo soup which I am sure will be delicious and I love orzo anyway. Sometimes we have to try different things and I do. It's also much healthier than having meat all the time though I am not preaching to anyone and will be having my koftas tomorrow anyway

Recipe below and happened to have all the ongredients in

"

Ingredients

1 tbsp olive oil

1 red onion, finely chopped

4 garlic cloves, finely chopped

400g tin butter beans or black beans, rinsed and drained

200g passata

85g orzo

1¼ pints vegetable stock

1 heaped tsp smoked paprika

100g kale or spinach, roughly chopped

4 tbsp pesto

sea salt and freshly ground black pepper

Method

Heat the oil in a large pan, add the onion and fry for 5–6 minutes, until it is beginning to soften. Add the garlic and fry for 1–2 minutes.

Add the beans, passata, orzo, stock and paprika and bring to the boil, then reduce the heat and simmer for around 10 minutes, or until the orzo is al dente.

Add the kale or spinach and a generous pinch of salt and pepper, and simmer for a few minutes.

Taste and add a little more salt and pepper if needed. Serve in bowls and top each with 1 tablespoon of pesto

Put together a Cottage-pie type creation, packed with loads of vegetables to complement the beef and up the vitamin content. I decided not to cover it with mash, instead opting for sliced potatoes to keep it nice and thin.

Made a cheesy bubble and squeak bake in the oven and had it with Lincolnshire sausages, roasted carrots and gravy. Was lush.

In Aberdeen, it's likely to have been made from the remnants of Footdee bay 😬🤣

Chicken and orzo pasta bake and lots of parmesan flakes and ground black pepper. I was off today and made a homemade apple tarte tatin so will have a rather large piece of that with some crème fraiche.

Had chicken with potatoes and Yorkshires as was too busy to have it yesterday

I utterly despise roast chicken I like it done in a pan with spices and sauces but must endure it at least once a week to keep my daughter happy, felt like tipping it in the bin and getting a takeaway
