I’m thinking of making a sort of bastardised mousakka / lasagne with it

But how would you cook one?

Peel it, slice it, cover it in spices and honey then roast at 180 for 20 to 25 mins. Have it with a nice salad.

Alternatively, make a veg tart with it.

I’d split it open, get my hands all over it, scoop it out nice and deep, then pack as much hot, meaty filling into it as it’ll take.

Plenty of béchamel over the top, a good handful of cheese, then straight into a hot oven until it’s bubbling, messy and absolutely begging to be eaten.

In that case, my suggestion would be to cook it like a stuffed pepper.

Slice it in half, scoop out the inards, salt and pepper. Fill with mince (gently spiced maybe) , onion, peppers and some of the removed inards, with cheese and slowly bake.

Wash it down with a pint of rum 😎

Extraction = 6 weeks

Fermentation = 3 weeks

Aging = 12 months.

If anyone’s after a quick fix it may be better to pop to oddbins.

I was going to suggest similar and just fill it with same as you would do with your moussaka but also add bechamel sauce on top and bake. Yummy.

If you leave the courgette on the vine it gets fucking massive and becomes a marrow.

Bechemel is what I did with the moussagne - and no bechemel is complete without a little nutmeg

Marrow as big as possible,skinned, cut the ends off to expose the seeds. Scrape out the seeds to make a tube. Fill the tube with a sage,onion, sausage meat stuffing, then wrap in foil. Bake on a low heat to allow the marrow to soak up the flavour. Mmmmmmmm

you can take the squash blossoms stuff them ricotta cheese and fry them
