Corey Taylor has a YouTube video of a live acoustic show in London a few years ago. It's mega!

Also for a bit of fun look up the Lounge Kittens, cover all sorts from Metallica to bob the builder lol.

I may of dreamt it, but I'm sure I was blown away by Rick Astley doing an acoustic version of Everlong by the Foos as well.
